a banana bread recipe
preheat your oven to 180C
sieve together 285g plain flour, 1 tsp bicarbonate of soda, and half a tsp of salt in a bowl
in a separate bowl, cream together 110g unsalted butter and 225g caster sugar. once they are combined, add in 2 eggs, 4 mashed (overripe) bananas, 85ml buttermilk, a tsp of vanilla extract, and mix all together. if you don’t have buttermilk, you can use regular milk with a little lemon juice squeezed in.
add your dry ingredients to the wet ingredients and combine. pour into a loaf tin (preferably with a loaf tin liner inside) and bake for around an hour. i usually check it at 45 minutes and cover with foil to continue cooking if the top is catching a little. an hour should do it, but you might need another 10/15. a cake tester/knife should come out clean. leave it to rest for a little and then take it out of the tin and enjoy!
